Light Wheat Potato Flax Meal Bread

Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 1/8 cups potato water -- *see Note 1/4 cup flax seed -- *see Note 1 cup whole wheat flour 2 cups bread flour 2 tablespoons honey 2 teaspoons salt 1 tablespoon dry milk 2 1/2 teaspoons yeast -- *see Note Place all of the ingredients in your machines fully assembled pan. Select the basic or white cycle and press start. When the bread is finished allow to sit in the pan for 10 minutes then remove to a cooling rack to cool. If you wish to minimize the holes caused by the kneading paddles. Remove the dough from the pan after the final kneading process. Remove the paddles from the pan. Spray the posts with pan spray. Then place in a pot and cover with water and boil until it is tender. If you wish to do this in a microwave, place the potato in a microwave safe container with a lid (you can use plastic wrap), cover with water then microwave on high for 10 minutes or until the potato is done. Then cool the potato and water and place in your blender and blend until smooth. If you have more potato water than you need store it in a tight lidded container in the refridgerator. Use within 3 days. * Whole Flax seeds should never be used in bread. You add no nutrition to your bread by using whole flax seed as they aren't digested when eaten. You need to grind the seeds in to a meal them place in your bread. To do this take the 1/4 cup flax seeds and place in your blender. Put the lid on and blend on high until they are a fine meal about 1 minute. Then place in the bread pan. Flax seed should be easy to find at your local health food store. If you can't find them they use sesame seeds or even poppy seeds instead. However, Flax Seed meal is high in Omega-3 fatty acids and is very good for you. * The amount of yeast in my recipes is usually 2-1/2 to 1 tbsp. This is the amount I need to use to get a proper rise from my bread. If you normally use less yeast, then by all means use the amount you normally use.
So much praise about flaxseed I like it a lot since I think it’s a great source of omega 3 and recently I saw that it might not be that great because our bodies don’t convert ALA as well as EPA and DHA from omega 3 from fish.. Something to remember. It does have other benefits though 🙂
