@Mags

     The Homemade setting's default is for a french bread recipe, so it uses an extended second rise. One can change these by selecting Homemade, then pressing the "cycle" button, then pressing "time" to adjust each cycle's length.

     If I understand your post correctly, you can set each cycle prior to bake to 0 minutes and bake for as long as 70 minutes. Unfortunately, besides the default french bread recipe time breakdown in the manual (PREHEAT/22min KNEAD/18min RISE 1/45min RISE 2/1:25 RISE 3/OFF BAKE/1:10 KEEP WARM/1:00) there's no clear defined times for the other recipes that I could find.

     Pages 31-32, all the way at the end, of the manual has more detailed directions for using the Homemade setting. Here's the link to the manual on the Zojirushi site, http://www.zojirushi.com/servicesupport/manuals/manual_pdf/bbcc_v20.pdf.

     Hope this helps!

I just acquired a used BBCC-V20 but cannot for the life of me get it to do a straight bake cycle which I need for a particular bread recipe. My Breadman does this easily and (thank goodness still works well) but I want the longer shaped loaf and really would like to extend the Basic bake cycle.
My guess is that I have to go to HomeMade and figure out the setting for each cycle to get a longer bake cycle.
On the Breadman I simply catch the end of the total breadmaking cycle, add 1 hour and stop it about 20 minutes of baking later. Works very well for the gluten-free loaf I make.
I much prefer the Breadman instruction booklet.

Is the V20 superior (a better machine) to the X20 or is it the newer model of the V20? You said the V20 is no longer in production, but I found a site selling new ones; Ace Photo Digital advertised on Amazon.com. Would you kindly clarify for me and advise which is the better one to purchase? I am thinking that it is not wise to purchase something that is no longer in production, since getting parts may be difficult or impossible.

Zojirushi BBCC-V20 Home Bakery Traditional Breadmaker

In Stock.
Ships from and sold by Ace Photo Digital.

Thank you for your kind assistance.

Hi, yes, I'd also like to know about the artisan breads. Also, I was interested in being able to sprout some seed/beans and then grind them and be able to incorporate them into bread. Would you recommend the X20 for that? i'm a beginner so simpler is better but i really do want to be able to use sprouts.
Thanks so much for any suggestions.
