Perfect Tuna Salad Sandwich

Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 package albacore -- tuna, 7oz pouch (not canned) 1 egg -- hard boiled and minced 1/4 cup celery -- minced 1/4 cup red onion -- minced 1 clove garlic -- mashed, smashed and minced 1/2 teaspoon mustard 1 tablespoon sweet pickle relish -- drained 4 tablespoons mayonnaise -- not fat-free 3 tablespoons green onion -- minced 2 tablespoons lemon juice -- fresh is best 1/2 teaspoon salt 1/8 teaspoon black pepper 1/8 teaspoon dillweed -- fresh is best In a bowl place the tuna and flake well with a fork. You do not want any large chunks left. This is important. Once this is done add the lemon juice and mix well. Then add the salt, pepper, garlic clove, dill weed and green onion. Mix well. Allow to sit for 2 minutes. Add the rest of the ingredients and mix well. Also, for this it is best to use real mayonnaise as it gives the best texture and taste. All of the vegetables should be minced small. I use only the packet tuna as it is dry and tastes better. It being dry is important as you don't want soggy tuna which makes soggy salad.
