No matter what adjustments I made to the recipes, (more or less liquid, more or less yeast, olive oil versus butter) I keep getting heavy bread with a compact texture inside. My elderly aunt, who passed away years ago, was blind. She never measured except using the feel of weight in her hands, and the texture of her bread was almost like angel food cake!
