Onion Toaster Bread

Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 1/8 cups water 2 cups bread flour 1 cup whole wheat flour 1 teaspoon oil 2 teaspoons sugar 1 1/2 teaspoons salt 2 tablespoons onion powder 2 teaspoons yeast Place all of the ingredients in your machines fully assembled pan and in the order specified for your machine. Select the dough or manual cycle and press start. When the dough is finished remove it to a lightly floured surface and divide in to 2 oz chunks (use a scale if needed). You should end up with 14 2oz dough balls and 1 1-1/2 oz dough ball or something close to this. Shape each of the 2 oz dough balls in to a nice smooth ball, cover with a damp towel and let rest 10 minutes. Flatten each dough ball until it is about 3 inches across, cover with the damp towel and let rest 10 minutes. Using a rolling pin roll out each dough disc until it is 4-3/4" across and as round as possible. Do not roll it any larger or it won't fit in your toaster. Cover the discs with the damp towel, place in a warm place and allow to rise for 1 hour. Preheat your oven to 350 degrees. Using a fork stick the risen dough disks several times to create about a dozen or so holes all over each disc (this is called docking). This will keep them from puffing too much, then place the risen discs on lightly greased baking sheet making sure they don't touch. Bake in the preheated oven for 15 to 20 minute. You do not want them to dry out or brown too much. Remove to a cooling rack and repeat with the rest of the discs. Once they have cooled, place in a zip-lock plastic bag. NOTES : I like to toast these, spread with a bit of butter and then serve them with... 2 slices of tomato and a fried egg on top. 2 slices of crisp bacon, 1 scrambled egg and some country gravy on top. 1 slice of canadian bacon, a poached egg and hollandaise sauce on top. Tomato slices, shredded lettuce with some italian salad dressing and a large spoon of turkey, chicken, tuna or egg salad on top.
